  1. Xanthan gum is a largely an indigestible polysaccharide that is produced by bacteria called Xanthomonas Camestris. Manufacturers place the bacteria in a growth medium that contains sugars and other nutrients, and the resulting product of bacterial fermentation is purified, dried, powdered, and sold as Xanthan Gum.

    It is generally accepted that Xanthan Gum is at least a partial contributor to the development of necrotizing enterocolitis (NEC) in infants who consume it. Studies found that the greatest problems associated with Xanthan Gum in adult humans were gastrointestinal problems or the exacerbation of them.

    None the less, Xanthan Gum is a processed synthetic that is not found in nature. Virtually no one has done studies on the effects of Xanthan Gum and its interactions with other synthetic chemicals that are also in the typical diet.   [edit]
